Food: Chicken, Avocado & Spinach Layered Sandwich

If you're like me, and feel exhausted after a long day at work and the thought of making dinner feels more like a chore than a stress relief, then this recipe is for you. I made this recipe for dinner last night within 30 minutes and my husband couldn't have been more thrilled. It's an easy recipe that looks quite impressive and is a great weeknight meal option. Oh, and it's healthy too!

(Serves 2)
Ingredients:
  • 1 sheet of frozen puff pastry, thawed and cut into 6 rectangles
  • 2 boneless and skinless chicken breast halves
  • salt
  • pepper
  • olive oil, for drizzling
  • 2 tablespoons of low-fat mayonnaise
  • 1/4 teaspoon cayenne pepper
  • 1 avocado, thinly sliced into 8 pieces
  • 1 cup of baby spinach leaves
Directions:
  1. Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper, place the pastry sheet rectangles on the parchment paper. Using a fork, prick the top of the pastry sheet rectangles. You want the pastry sheet rectangles to remain flat while they're baking rather than puffing up. Cover the pastry sheet rectangles with another piece of parchment paper and place another baking sheet on top. The pressure of the second baking sheet helps to keep the pastry sheet rectangles flat.  (Easier Option: You can substitute any type of bread here instead of puff pastry.)
  2. Bake the pastry sheet rectangles for 25 minutes until golden and let cool before handling.
  3. Preheat a grill pan and season the chicken with salt, pepper and olive oil. Grill until the chicken is cooked through.
  4. In a small bowl, mix together the cayenne pepper and the mayonnaise to create a spicy mayo.
  5. Assemble the Layered Sandwich: pastry sheet rectangle at the bottom, sliced pieces of chicken breast, spinach, 2 avocado slices, pastry sheet rectangle with some spicy mayo on the underside of the pastry sheet rectangle, and repeat the layering.
  6. Enjoy!
